A useful food safety check-list for business owners

In general, small business owners are time-poor, focused on internal operations, and more often than not lack food safety-related skills and knowledge to guide their team effectively.

They also lack the knowledge to understand the appropriate food safety records they need to maintain (eg. Food Control Plans / Food Safety Plans) in order to be proactive about food safety management.

Businesses could benefit by using training providers who incorporate this knowledge into their own basic training.

A useful check-list for business owners could include:

  • Management details
  • Temperature records (chillers ≤ 4°C, freezers ≥ -18°C, cooked product ≥ 80°C)
  • Staff training record
  • Inwards goods record
  • Cleaning schedule
  • Pest control record
  • Managing food allergens
  • Sickness record
  • Maintenance record
  • Transport of food record
  • Off-site catering record
